Ingredients

  • 1 pound large shrimp, peeled and deveined

  • 6-8 garlic cloves, thinly sliced

  • 1/2 teaspoon red pepper flakes (adjust to your spice preference)

  • 1/3 cup extra-virgin olive oil

  • 2 tablespoons dry white wine (optional)

  • 2 tablespoons fresh parsley, chopped

  • Salt to taste

  • Crusty bread (baguette or ciabatta) for serving

Preparation

  1. In a large skillet or pan, heat the olive oil over medium heat.

  2. Add the sliced garlic and red pepper flakes to the oil. Stir and cook for about 1-2 minutes until the garlic becomes fragrant and starts to turn golden. Be careful not to burn the garlic.

  3. Increase the heat to medium-high and add the shrimp to the pan. Season with a pinch of salt. Cook the shrimp for about 2-3 minutes on each side until they turn pink and slightly curled.

  4. If you'd like to add a splash of white wine, pour it over the shrimp and let it simmer for another minute or two until the alcohol evaporates.

  5. Sprinkle the chopped parsley over the shrimp and stir everything together for a minute.

  6. Remove the pan from the heat.

  7. Serve the gambas al ajillo immediately with some crusty bread on the side to soak up the delicious garlic-infused olive oil.
