Ingredientes

  • 2 cans (28 oz each) whole peeled tomatoes (San Marzano tomatoes are highly recommended for their flavor)

  • 1/4 cup extra-virgin olive oil

  • 1 small onion, finely chopped

  • 4 garlic cloves, minced

  • 1 teaspoon dried oregano

  • 1/4 teaspoon red pepper flakes (optional, for some heat)

  • Salt and freshly ground black pepper to taste

  • 1/4 cup fresh basil leaves, torn into small pieces

Preparación

  1. Heat the olive oil in a large saucepan over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes.

  2. Add the minced garlic and cook for another 1-2 minutes until fragrant, but be careful not to burn it.

  3. Crush the whole peeled tomatoes using your hands or a potato masher. Add the crushed tomatoes and their juice to the saucepan, along with oregano and red pepper flakes (if using).

  4. Season the sauce with salt and freshly ground black pepper to taste. Stir well and let the sauce simmer over low heat, partially covered, for about 30-40 minutes, allowing the flavors to meld together. Stir occasionally.

  5. About 5 minutes before the sauce is done, add the torn basil leaves, and let them infuse into the sauce.

  6. Taste the sauce and adjust the seasoning as needed. If the sauce tastes too acidic, you can add a pinch of sugar to balance the flavors.
